Synopsis
Sejak dahulu kala, manusia memperoleh makanannya dengan melakukan berbagai kegiatan yang dimulai dari berburu, meramu, dan bertani. Pengendalian dan keamanan mutu pangan merupakan hal yang penting untuk dilakukan agar bahan-bahan yang diperoleh manusia terjaga dan dapat digunakan secara maksimal. Pengendalian mutu pangan sudah sejak lama dilakukan dari abad prasejarah dalam hal mengeringkan dagung, sayuran, dan buah-buahan agar awet lalu dapat digunakan sewaktu-waktu.

Yoyok Budi Pramono adalah dosen Fakultas Peternakan dan Pertanian, Program Studi Teknologi, Pangan, Universitas Diponegoro. Penulis aktif menulis berbagai judul buku dengan topik serupa.
Setya Budi Muhammad Abduh adalah dosen dan pengajar Fakultas Peternakan dan Pertanian, Program Studi Teknologi Pangan, Universitas Diponegoro.
Jefri Pandu Hidayat adalah dosen dan pengajar lulusan fast-track S2 Teknik Kimia Undip yang saat ini mengajar di program studi Teknologi Pangan, Institut Teknologi Kalimantan. Bidang ilmu yang ditekuni adalah Rekayasa Pengolahan Pangan
Clarisa Gunawan adalah alumni Teknologi Pangan Universitas Diponegoro. Saat ini sedang berkarir dalam bidang pangan bagian Research & Development. Buku ini adalah buku pertama disusun dengan topik bidang pangan.
